Red Wattle
Developed in the southern U.S., the Red Wattle is a heritage breed hog characterized by two fleshy “wattles” attached to each side of the neck. Red Wattles are known for their hardiness and mild temperament, and they produce a flavorful and lean red pork preferred by chefs across the United States. Red Wattle pork is recognized by the Slow Food USA Ark of Taste as a “delicious food in danger of extinction.”
Duroc
A large broad-shouldered brown pig with large floppy ears, the Duroc is known for its distinctive flavor and tenderness due to the through marbling of the meat. The Duroc is sometimes referred to as the “Black Angus” of pork. Creekside Farms has incorporated the Duroc for our cross-breeding program because of the rich-flavored and tender pork.
Red Roc
The Red Roc is our new breed currently in development. By crossing the the Duroc and Red Wattle breeds, we combine the well marbled meat of the Duroc with the superior flavor of the Red Wattle.
